Quick Healthy Recipes for the Fall Spirit

Fall is here and in full swing, As the leaves change color and the temperatures drop, you might find that you are in the mood for some more distinct fall flavors. To begin, take an empty mason jar and add your oats. Pour in the almond milk and add the chia seeds to the jar. Finally, add the pumpkin to the mix and season with a dash of cinnamon.   • 1 can garbanzo beans (rinsed and drained)
  • 1 can diced tomatoes (no-salt added)
  • 1 cup diced sweet potato
  • 1 cup cauliflower florets
  • ½ cup plain Greek yogurt
  • ¼ cup thinly sliced yellow onion
  • ½ cup vegetable broth (organic)
  • ¼ tsp sea salt
  • 2 tbsp fresh cilantro
  • 1 ½ tsp olive oil
  • 2 tsp curry powder

Begin by putting nonstick pan over medium heat and adding olive oil. Put the sweet potato into the pan and sauté for 3 minutes. Lower the heat to medium and add the onion, cauliflower, and curry powder. Allow mixture to cook for 1 minute as you stir constantly. Next, add the broth to the mixture as well as the salt, garbanzo beans, and tomatoes. After you bring to boil, reduce heat and simmer for 10 minutes; stir occasionally. Once this is done, sprinkle with cilantro and serve with the yogurt.
